Judging Protocols
Your submitted products will be rated for six major factors including:
Appearance: Color, defects, surface condition.
The judges look at the appearance of the product, visually focusing on the details. Does the product look on par with what I have experienced before in this category? Is it the same, better, or worse?
Aroma: Fruity odor, pungent, off color.
Samples are held under the nose to ensure the maximum aroma sensation.
Taste: Sweetness, sourness, bitterness, saltiness, umami.
Judges must bite, chew, and move food around to ensure contact with taste buds.
Mouthfeel: Texture, firmness, juiciness, mealiness/graininess, stringency.
Observe the first bite, masticate the product, and observe the residual chew.
Aftertaste: Often a sample will have a distinctively different after taste that may or may not linger in the mouth but varies from the initial sensory impression.
Overall Impression (Gestalt): This is exactly what it sounds like, the overall impression of the product, which includes all of the above factors.
